Goo oozed out of your temperature probe? What probe is that? Also, high end probes are rated to 700F (only)....I don't have to tell you, I'm sure you've worked it out....don't leave a probe in after 500F is a good rule. And the "Musty" smell....likely the oil and the mangrove charcoal com...

Although it doesn't apply so much to baking specifically - I am not averse to leaving the lid up (being a bloke and all) until the whole top of the charcoal bed is well alight.

Skuzy - do you find the cheese is way to smokey with wood chips? I smoked some cheese in a similar way and when I offered a sample to a firey at work, he said it smelt like a smoke damaged house and wouldn't touch it.

is it a kamado joe? dont they warranty it for life? I've cracked my KJ firebox and ring and BBQG replaced it under warranty. I found a replacement part on the Smoke King BBQ site which may be another option for you. http://www.smokekingbbqs.com.au/product/fire-box-and-fire-ring/ Thanks for the tips...

My seals from the start of this thread are still good as new, maybe a bit blacker. They are pretty flat and when I use two probe thermometers, one of them has quite a thick lead and breaks the seal a bit.

I put a small pile of charcoal from the last cook in and ran it at around 150 C for a few hours. No dramas so far.

BTW it has had a pretty big crack for ages (see reference to leaf blower)

The Behmor 1600 plus is the baby I have, so far pretty happy with although its fair to say I will spend the rest of my life perfecting the roast. Its a bit like BBQ that way.
