Made up a spicy rub and coated a Boston Butt overnight. I would appreciate some simple advice which I probably should know but I have struggled. When cooking a Curry I like to make the paste, fry it off, add some coconut cream or similar and slow simmer for an hour or two depending on the meat chosen. Here is a simple delicious thing to do with fresh snapper. Diamond cut, and marinate in straight lemon juice and herbs. I used garlic chives but marjoram, tarragon, parsley and so on all work.
