That's awesome mate. I was hoping you give follow up picks. I'm going to do something similar off the shed. Just a big concrete slab and dirt at the moment with a roller door to the bar and keg fridge in the shed. Thanks for the ideas.

I treated mine the same as I would chicken, smoke as well. I also basted with maple syrup. Beautiful.

Don't get a four quarter, get a shoulder or something. I did one last weekend and the shoulder is heaps better. Good luck with the toy though

No issues with redgum here. It's the only wood I use for smoking, lamb, pork, fish, chicken, all good.

I used to argue with the Mrs all time about how many times to turn steak. I said heaps, she said once. That nitrogen guy on masterchef validated my view the other week by saying turn it every 20-30 seconds.

I'm in the stonefruit game. One question I have wanted to ask is this. Would chemical residue be present in wood? If so could you age it to remove any residue?

Last night I brined two big chooks expecting to smoke them tonight but after a very long day that won't happen. Should I take them out of or will they be ok until say Friday? I used the original recipe on page one as always.
