Re: Australian Native Timber Matrix for Smoking

G'day CS,

Apple Box wood is a little difficult to find in Vic at the moment, but I'm still looking as I am keen to test it for smoking as some say it smells just like apple when burning.

Nice work on the latest Matrix chart and the addition of the Forum Tag.

Re: Australian Native Timber Matrix for Smoking

Yes, the large Apple-Box the tree produces small white flowers Jan-May and is popular with beekeepers, they seek out this tree to place their bee boxes near, when in flower, as it produces great amber 'molasses like' sweet honey. http://i1338.photobucket.com/albums/o692/AussieBBQSmoke/5616949d-7d61...

Re: Australian Native Timber Matrix for Smoking

G'day Forum members,

Has anyone tried Apple Box Chunks for BBQ Smoking?
Eucalyptus bridgesiana. APPLE BOX. Victoria, New South Wales, Queensland MYRTACEAE (Myrtle family)

It seems to be quite rare, and appears to produce a sweet smoke.

Thanks,
Terry.

Re: Australian Native Timber Matrix for Smoking

Testing of the 3 Box smoke woods so far show that they are good for any meat or cheese, as per the Matrix Chart. I welcome other views, but my tests show Grey Box to be mild, Red Box to be a slight bit sweeter, and Black Box to have a more earthy country flavour, if it was wine I'd say Black Box ha...

Re: Australian Native Timber Matrix for Smoking

G'day again, Here's a pic of 3 Box woods together. Left:Black Box...Middle:Grey Box...Right: Red Box We now offer all 3 as Wood Chunks, and Red Box and Grey Box as sawdust. - Black box is quite rare and difficult to find, it has a black and grey skin, with pink centre. We need to add it to the Matr...

Re: Australian Native Timber Matrix for Smoking

G'day Forum members, Has anyone tried or heard of Black Box wood being used for BBQ Smoking ? Not much in Google about it. I have found a Mill that cuts it. It appears to be a very dense timber, like the other Box woods, and is mostly used for knife handles, jewellery boxes and fine flooring. Thanks...

Re: Australian Native Timber Matrix for Smoking

Great work C.S. ! I'll take a fresh copy for reference. Whenever I visit a new country mill, sourcing rare smoking woods, I hear new stories of how they, their neighbours and usually the local butcher, use their local Aussie timbers for smoking fish, pork or even Roo. One guy said that his 13 yr old...

Re: Australian Native Timber Matrix for Smoking

G'day Card Shark and Forum, Yesterday, I drove to a small bush sawmill 4 hrs N. of Melb and picked up 2 cubic metres of Grey Box sawdust and 1 metre of Red Box, and some tree offcuts, to be used for smoking Chunks. I see we don't have Red Box on our Matrix chart yet. The locals around the mill, pref...

Re: Australian Native Timber Matrix for Smoking

G'day Card Shark, A polish customer recently told me that he was brought up smoking meats with Plum wood and was looking for some. I didn't know it was so good. Google has it as:- "Great on most white or pink meats, including chicken, turkey, pork and fish. The flavor is milder and sweeter than...

Re: Australian Native Timber Matrix for Smoking

Thanks Steve for all the good, albeit scary, info. Hazardous sprays like DDT etc have been outlawed since the 70's, and any trees or vines that may have been sprayed with them, have now been replaced with standard orchard replanting practices, or in the case of winery vines, been removed by their se...

Re: Australian Native Timber Matrix for Smoking

G'day, Re. sprayed fruit trees: I was concerned that Winery Grapevines and Cherry tree wood may have residual spray that may be hazardous when smoking, but after Googling it, and speaking to a Winery manager and 2 Cherry famers, it seems that the sprays authorised for Australian use, break down quit...
