Welcome to the forum mate. Nice work on the build, and nice arsenal you have there.

Sorry to hear about your stuff being stolen at home.

Looking forward to seeing more of you BBQ exploits.

Will you be attending the BBQ Festival in Port Macquarie in March?

Nice Dalmatian rubbed brisket point.

Cooked on the WSM with a mix of apple and cherry wood.

Re: Took the plunge

Looking good mate. As far as the leaking goes it should improve as you do more smokes and the joins get a bit of 'gunk' on them. There is also a gasket kit that you can get for them - I have one but havent bothered fitting it yet. As for the water pan, there are plently of people who prefer the olde...

Re: Took the plunge

Great pick up! Now you need to get her dirty. I think you will find the temps easier to maintain a lower temp once you have used it a good few times too. Could be wrong but it looks like it has the shallower water pan, so maybe a 2007(ish) model. What is the 2 letter code on the top vent? Have fun w...

Went with Hard and Dry but am happy with either. I like a bit of restance in the bark.

Re: Small Charcoal smoker at Masters

Not to take this thread too far off topic, but check gumtree or ebay for a second hand weber kettle. It's the best way I know to take your first steps in to cooking with charcoal.

Ken did you get all of that out just for the picture! Where do you keep it all? :) I actually did it a couple of weeks ago for another reason but had it handy in my flickr account. :) I keep them tightly crammed in a couple of cupboards I have claimed in the kitchen, and wherever they can fit in th...

Re: Rosle Charcoal Kettle Grill from Masters

The vent in the middle of the lid seems like a more logical position than the offset vent on a Weber, but whether it makes a difference I wouldn't know. I would think the benefit of having the top vent offset allows you to have the smoke travel accross your food and lets you move the location of th...
