Charcoal ABSOLUTELY GIVES YOU FLAVOUR! - Briquettes just give steady heat, gas.....well if it wasn't for my Mrs who likes her steak cooked on gas i probably would never use it!
For a lot of people - gas = convinience - or they dont know any better......Me - garlic = gas!

Personally Hammer i let her get up to anywhere between 200-300f first then put the meat in which will drop the temp back down then when its back around 220f start playing (closing) with your vents.
