Also - avoid the compact kettle. It's really only good for direct grilling, as there's not enough depth like the real kettle. I marinated the chook in Asian inspired flavors, garlic, coriander, two types of soy and fresh chilies, fish sauce. Set the charcoal with some apple wood and some almond wood from the garden, and smoked the chook. It was extremely delicious, I will be using this combo again! http://i1178.photobucke...
