If you have accesses to Costco They have sweet baby rays BBQ sauce Hickory flavor would do the job, Have a look in The recipe and cooking Techniques section of this forum for sauces

Yes I will try the cheeks next time LoL , As far as the water pan goes I think I will fill it with sand, there seems to be quite a lot of people with WSM not using water, just foiling the pan, My next cook will try it with sand see how it goes might burn less coal hopefully
