That's your choice, there is no rule.....but I'd go lightly to start, then work out if you need more.....remember that Smokai is good for a smoker 2m x 2m x 3m.

No, "ageing" stops, but freezing smashes the cellular structure, and that is useful for low and slow.

Hard to say from pics, but I'd cut any grey off and I'd brine them....then you should be OK, They will start to oxidize if the seal is broken and that be the smell.....this can happen when opening the carton or just with handling or in you fridge if others are moving bottles etc. I always freeze the...

I also use Jarrah in my offsets...It's easy to get! When I'm doing Chicken, I have a smaller red hot fire so there is next to no smoke when I put a new piece of wood on.
