That flappy looking things is called the 'skirt' or something, I trim it off and smoke it while the ribs are cooking for adding to baked beans or eat it – 'pitmaster's privilege'!
The ribs are 'spare ribs' so if you cut off the top along the cartilage what you have left is St Louis style ribs.

When I was in the US in May I went to a dozen or so BBQ restaurants between LA and KC, the baked bean sides at most of the places I went to had a similar taste, does anybody have a recipe for these beans?
