I would mix the meat more to get the proteins worked up and make it more like a sausage less crumbly
also add some white pepper,allspice and sumac if you have it.

I live in the bush,smokes not a problem. Part of the problem is if I run out I dont have a shop just down the road to get some more,I just look at tonnes of free wood that I cant use.
