First cook in the offset. Way way way to much smoke pretty sure I pissed off the entire neighborhood. I tried using just an iron bark fire. may have to try heatbeads till I get the hang of it.

amazing came home around 6:30pm, and the lamb that was doubled foiled and in 2 beach towels, & placed in the beer fridge was still warm! and NO my fridge is cold! the scapula blade bone came straight out with one pull! maybe it could of stayed in the esky? ??????? but not worth the chance! Sent...

They look nice. I've always cooked my chooks breast-side down - I figured the breast would dry out if exposed to the higher heat on top. I've never thought of that. There was plenty of moisture in these two. I went to bed and forgot to take them out of the brine so they had around 10 hours in the b...

The Danger zone is 5 – 60c . It’s the amount of time it spends in the danger zone that’s the problem. If you get home and its 20c then you have a problem as it’s obviously been in the zone a long time, if its 55c you could probably risk it. That’s my 2c worth. :wink:

Did a couple of brined chooks, one has left over rub form last weekends pulled pork the other has left over BBQ sauce from last weekends pulled pork. So addictive cooking chicken this way.

I've been wanting a bigger more versatile cooker for a while. Since joining the forum offsets have appealed to me, due to cash restrictions I have been thinking about building a UDS. Yep it really is the best chicken ever. Did my first one 2 weeks ago on the kettle, did another one last weekend. Will be doing another one this weekend when I get the new offset home as its first cook.

Its funny it so so simple and it just makes the old cooked chook so moreish.

That base mix is so good my kids will no longer eat takaway pizza. I highly recomend keeping a packet in the pantry.
