First cook in the offset. Way way way to much smoke pretty sure I pissed off the entire neighborhood. I tried using just an iron bark fire. may have to try heatbeads till I get the hang of it.

If it was to have a tragic accident it would be wasteful not to use the meat. I'd recommend a BBQ wake.

They look nice. I've always cooked my chooks breast-side down - I figured the breast would dry out if exposed to the higher heat on top. I've never thought of that. There was plenty of moisture in these two. I went to bed and forgot to take them out of the brine so they had around 10 hours in the b...

The Danger zone is 5 – 60c . It’s the amount of time it spends in the danger zone that’s the problem. If you get home and its 20c then you have a problem as it’s obviously been in the zone a long time, if its 55c you could probably risk it. That’s my 2c worth.

Did a couple of brined chooks, one has left over rub form last weekends pulled pork the other has left over BBQ sauce from last weekends pulled pork. So addictive cooking chicken this way.

Welcome Django look forward to seeing the bbqygoodness that BBQ&BEERS coaxes out of you. We have the same model and have had a ball mucking around with it. Chris's suggestion to move the wheels is a good one that we still need to do on ours. so while you have the grinder out................

Welcome Django
I've been wanting a bigger more versatile cooker for a while. Since joining the forum offsets have appealed to me, due to cash restrictions I have been thinking about building a UDS. Then this little beauty came up for grabs at the low low price of $150 and I had to have it. http://i835.photobucket....

Re: Gourmet Brined Chicken
Yep it really is the best chicken ever. Did my first one 2 weeks ago on the kettle, did another one last weekend. Will be doing another one this weekend when I get the new offset home as its first cook.
Its funny it so so simple and it just makes the old cooked chook so moreish.

That base mix is so good my kids will no longer eat takaway pizza. I highly recomend keeping a packet in the pantry.Nini8r wrote:I recently found a packet mix from woolies the brand is Laucke pizza & focaccia it make 4 large pizza bases and I think its great.
