Seeking solutions

Like many I use the snake method and have a brick in the middle which supports a water/drip tray. On a few occasions I have nearly tip the water over when attempting to adjust the coals. I would hate to deal with wet coals halfway into a cook. I am thinking to maybe mount the water pan from the side...

I keep hearing about Cape Grim meats and wondering how much better it is compared to the regular stuff ?

Jump to the finished product. Because of time constants I didn't go all the way to pulled status.
Nice level of smoke and a bit of heat but not too much.
I am giving this cook a 6/10.

Progressing well, 5 hours down, temp stead at 110c (internal temp 77c)

A bit late getting it on the grill, had to put the fresh air vent back which hopefully will improve temp control :D

I think using pop rivets to hold the pork ribs in place is a good idea as long as you remove them after cooking. :P
