Tried this method again but put it in at lunch on the way back from a meeting and set the temp to 55C. Perfect medium rare. The BBQ plate was red hot and had been used to cook some sausages beforehand which i suspect added to the searing effect. What gets me is the way this method almost insulates t...

If you haven't already tried it the chipotle mayo is awesome.

Loved it on burgers and also made some rolls with roast chook leftovers and cheese toasted under the gril.

The steaks were prime ribs from Costco. A bit of an indulgence at $20 per Kg. I understand they come frm Northern Queensland but I could be wrong. Hi all New here - first post. Been lurking for a couple of weeks looking to research a Kamado. Tried the method i found here for a slow roast steak even though i was sceptical.
