Try the toum at El Jannah at Gladesville and you will be hooked. Regarded as Sydneys best chicken by many.

Soo good with BBQ chicken hot of the charcoal. They also do great chips.

I ordered some on line but it had gone off before getting here. The tube was like a rock.

Ended up using red high temp gasket silicone "for turbos and superchargers" from Supercheap Autos. Many high temp pizza's and high temp sears and it still has good grip.

With the vision you get 2 rack and an old pizza tray works well as a deflector.

Good advice there too. I have a ss tray which I picked up for about $10 from the local $2 shop and do exactly the same when searing a lump of beef on the bottom rack, then adding the extender rack and the trays a a deflector to finish off the beef as an indirect roast. a very hadn't and cheap acces...

Using a Vision Kamado with the two tier rack, I use an old pizza tray on the bottom shelf as a deflector and slowly bring my pizza stone up to the 250 or sometimes 250 plus temp on the top shelf. Not off topic at all. I am looking for ideas. Any flavour recommendations

I have done garlic butter, chives and mustard and once had a roast capsicum butter on a steak (not what i ordered but interesting)
