if your in Bris area some good butchers are superbutchers - yatala & seneral shops see web , pattons - underwood + coast , meatwharehouse - Logan + Yatala and i belive Kevin recommends adams smallgoods - carol park + smokey mick can recommended several coast ones - good luck
