My Sandlewood has finally dried out so have a sample under some very meaty beef ribs. Very different and distinctive smoke. The timber was almost as yellow as the base American mustard on the meat! Absolute, I get smoke rings from some charcoal. My name is Smokey Mick but that dont mean I like over smoked food unless I want over smoked food. Man that's a real shame your getting frustrating cooks out of wsm, i'm thinking there could be an issue with your fuel because it sounds like your doing everything o.k. First time i have ever used one in my life last Friday - Lamb shoulder - whole fire grate full of lump added some lit in the middle...

Thanks Magnus, Yes i know of that site and now have a real reason to visit 8) , actually talking of that site they tend to push only using briquettes in favour of lump but i rarely have any b'quettes cook almost entirely on lump and it worked a treat no sudden spikes or drop's in temp just steady al...
