Brine beef? Apart from removing the silver skin as you've done, I'd just trim the fat on top down to 1/4" thickness. Then apply a liberal coating of coarse salt and pepper rub and throw on the BBQ. Nath, i would sit them in a tray with some fluid keep the meat just above the water on a grill with some herbs & spices cover with foil and steam for anything from 4 - 6 hrs then uncover and brown, you can also a reverse sear for colour at the end.

Glen, :roll: Umm another tip for ya :lol: When you foil the water pan, Scrunch up the foil on the inside of the rim so that its not hanging down in the water.
