Nice wings Jo, a timely reminder to put them on next weeks menu. Glen, what was wrong with the pork? The crackle? That stuff is bad for you anyway :lol: (well thats what I tell myself ) :lol: Yes great wings! Yeah the Kettle makes crackling so good i think i will be WSM the next one with nice chewy...

I like to heavily (really heavily) salt the outside and cook to medium rare on the spit, always comes out beautiful. Surprisingly it doesn't taste over salty when sliced up. Tried the pork ribs last time Glen. Good quality and reasonably priced ($12 kg) but really varied in size + cooking times. Next time will ask for similar.
