Not sure hoddo. I've never wet brined bellies, only dry cured them. But I have wet brined butts before for ham and bacon. Came out great.

Pork party.

Yesterday afternoon I hot smoked this lot. Went to about 11 pm. All good and I'm pretty porked out by now. You may also need to take the burner out and boil it and poke every hole in it.
I was having similar problems and contacted Weber. They sent me a new regulator first and when that did not fix the problem the suggested the boil the burner trick.
After I did that it worked just like new again.

Cooked this smallish piece. High and fast. Crackle came out perfect. had that nice hollow sound when knocked. tasted even better.

Also - avoid the compact kettle. It's really only good for direct grilling, as there's not enough depth like the real kettle. There's a deluge of compacts on ebay all the time, so don't get caught out. The photos people take often don't show the compact's side profile (or bolt-on legs) so I find th...
