Pretty simple once you decide whether you are a thick or thin type of Jerky person. No flavor ribs...had no rub, so I pulled out a package that said pork injection, I think it would have to have been from at least 2011. just could not bring myself to put Montreal Steak on BB's...should have. Also, just did not put enough of what ever the rub was on it! Should have coated them again...

pelletgrillaccessories.com also make a DD Hood, they actually were the 1st I believe. They now offer a version that has a flip doo that one can slide to adjust amount of smoke in chamber. I did a Product review of the product on Pelletheads.com, did find that it stabilized temps, and pellet consumpt...

Either lost in translation on last 2 words, or I hope your wife does not read this site...I love the Gold Blend...40% White Oak, 30% Red Oak, 20% Maple & 10% Hickory...one fine Blended pellet! Oak, a very under appreciate hardwood in BBQ cept for most Texans!

To the best of my knowledge, hardwood pellets produce about 8500 BTU/lb. The wood really does not matter, yes different hardwoods have different properties, but when pelletized, I believe that is not a factor. The unit controller, and to a lesser extent ambient conditions, have more to do with pelle...
