DC First Brisket Mostly A win for Fathers day

Cooked a cape grim brisket as follows on the Davey Crockett. GMG gold pellets (not allowed to use Texas as the wife does not like it smokey). 7 hours 185 F 2.0 hours wrapped in foil 285 F 3 hours unwrapped at 285 F until 190 F internal (plus the kids were hungry) Rested for 30 min in foil Nice bark ...

My DC uses heaps more pellets in the wind, it also has bigger temp variations in the wind.

Still working on how to do photos, got nice char.

Used GMG premium gold blend, much nicer than fruitwood.

Even the wife liked it and she is a fussy cow.

Just tried Gold blend GMG, won't be going back to fruit wood, theres was something in it I did;t like. It was OK, but gold is AWESOME!!! Fruitwood is quite Light. The Gold Blend is fantastic! ......Wait till you try the Texas! Chris I'm thinking my last wagyu cape grim brisket with texas?? Got Mald...

Just tried Gold blend GMG, won't be going back to fruit wood, theres was something in it I did;t like.

Got some tiny miserable wings for $3 at coles.

Cooked 500 F then turned after 10 mins
Cooked 500 F then Turned after 10 mins
Cooked 350 F until 203 F internal (only 5 mins due to small size of wings)
Sauced with Honey Baby Rays
Cooked 500 F until blackened nicely

Best wings I have had !

Tried again using the following profile: 180 F for 30 mins for smoke 350 F for 30 min for cooking 350 F until 190 F internal for fall apartness Chicken was raw and rubbery, so changed thermometer position and it went from 190 F to 170F. Cooked until 190 F again at 350 F, colour changed a lot nicer b...
