I don't see how something cooked properly can dry out just because of the heat source used. Air flow. If your equipments combustion uses more, it takes moisture with it. The longer the cook, the more a consideration. If the recipe book that came with your BBQ mentions a water pan... there's a reaso...

At council cleanups here on the Gold Coast strip, lots of BBQs on the curb and almost exclusively gas. So from a longevity, quality and resale value I concur with that point beaver and others make.
