Yep that would work to some degree I guess but a bit bogan. Have found the handle longevity a problem on that style too. That triangle job looks the go, and it does 12. Saw it was used at the 2010 Eggtoberfest :idea:

Hi RolyM, Nice part of the world North Carolina. Recently returned from Florida after 8 years state side. We have been making the traditional one for a while but enjoy both.

Actually they no longer have an agent here either so I organized a few mates and together we bought 1/2 a pallet of 20kg bags which worked out pretty economical. It's $160 to ship a pallet by rail X-Sydney but you need a forklift at the receiving end otherwise its an extra $50 for the unload. This i...

Other established woods for smoking are Apple, Cherry and Pecan, and all are grown in Australia! Is anybody on here currently selling them?

Brining can definitely make a big difference. Many books and processes are out there.
