I cook 2kg whole oyster blades at 225f 6 or 7 hours using 3,2,1 or 3,3,1 depending on how the cook is going and as Titch said it makes a wonderful grilling steak,its a very versatile cut we also use it in curries and stews, cheers Pete.

Narmnaleg I normally use them in sauces. They are quite smokey and have a raisin smell about them. Not super hot either which is nice.
