On mine it's just the BBQ smoke stain and that cleans off with dish-washing liquid
Ahh that's it and add some good old fashioned elbow grease.

Re: Peach Paper or Red Butchers paper

Hi Eltaco & welcome,
Personally I don't use either, just a good quadrupple wrap in foil.
From my knowledge your on the mark with the kraft 60gsm.....I may have seen mention of 80??
Save your money for other goodies! I do know people who use baking paper then foil wrap that.
Good luck.

NOW they are setting up shop in Australia/Melbourne....woohoo bring it on AMAZON. Looking forward to this.
This is gonna shake up the state of play for poor old E.Bay.
Can't wait.

Re: First Pork shoulder

My wife picked up a cheap bone in pork shoulder during the week so I thought why not. Currently patiently sitting on the stall at 67c. Nice one AntinOz, And why not...tis such a great winters day in Melbourne....why it has even got me in the garden feeding my sad looking banana plants. Keep us post...

Hi Davo & welcome Mr.Peter, The cut is what most people know as girello...or back when I was a butcher the Eye of the silverside. I cook this on around 100c..treat it the same as brisket to be honest. I have also tried a couple of small brisket point ends with success too. But to be honest this is a...
