hi, I just looked at my Baby 'Q' gauge and there is 400 Fahrenheit and no 400 Centigrade, so I'm assuming you mean the 400 F degrees I don't know about others but I pretty well always cook above 400 Fahrenheit from memory as I'm not too sure how accurate the temp gauge is relevant to the cooking tem...

Dave they have to be very thick cut steaks, I ask my butcher to cut them extra thick for the BBQ I use my iphone to time the 4 mins each side at the Roast setting (not maximum) then turn off the gas and turn the steak over, so the griddle marks will give the cross hatched design each side.
