Re: Brisket pot roast 3-10-2015

Yep AnzacPaul I put in a water pan. I think part of the problem I had with the temp was due to the following; 1) Changed from landmann briquettes to the Hotshots BBQ Briquettes. The Hotshot seem to have a longer burn time so heat build up over the time. 2) During all of my previous cooks (5) there w...

Re: Brisket pot roast 3-10-2015

Things have gone off the rails at the 4hr mark. I couldn't keep the temp within a good range and at one point was breaching 160c at the grill, even dumping 1/2 the coals out seemed to have minimal effect. At 87c internal temp I decided to abandon the kettle and move the meat to a more contro...

I don't want my onion to over cook and I find it's a good way of reading the temp at grill level.

Re: Brisket pot roast 3-10-2015

Decided to just go with a dry rub the night before the cook. 1 teaspoon coarse salt (cooking salt) 1 teaspoon coarsely ground black pepper 1 teaspoon dry mustard 1/2 teaspoon garlic powder 1/2 teaspoon onion powder For the cook, I am planning 5 hours then 3 hours rapped and 1/2hr rest. http://i718.p...

Re: Brisket pot roast 3-10-2015

I cooked one last week and followed grandmas way of cooking it. I browned it off in a cast iron pot then deglazed with a cup of red, returned the joint with carrots, celery, onion, swede, turnip, 6 peeled cloves of garlic added 2 cups of beef stock, 2 tblsp Worcestershire sauce,3 sprigs of rosemary...

Meat handling at the local butcher.

Ok, so I when shopping with my darling wife and while canvassing the meat offerings at a local butcher (within a shopping center) she commented that she doesn't buy from this particular butch because they handle the meat with bare hands (then exchange money) when serving customers and that this is a...

Re: Newcastle's Best BBQ Cook

Mark2011 good on you for trying to get things happening here in Newcastle. I am not sure how are comp like you described would work ? Oh trust me, I'm not sure how it would work. Brisket pot roast 3-10-2015

The things you find when you're not looking. :D I chanced upon the infamous, tough, ornery cut of meat the brisket. Because my intelligence didn't feel complete insulted by the per kilo price of the $11 I put it in my shopping trolley with some nice grass fed scotch fillet steak which will be for to...

Aldi (Landmann) black pearl bbq

August 2015 had the Black Pearl charcoal BBQ on sale for $246 including a pizza ring. This Aldi's Coolabah brand is a re-badged by Landmann which are popular in Germany. This same unit (note without pizza ring) is selling for $300 in BBQ's Galore plus $80 If you want the pizza ring. They didn't sell...

I had been looking for one for a few months then Aldi had their upright smoker on sale but I missed out and got the consolation prize of the Pearl with ...
