I agree with you actually, this is the first time I tried with the glaze on top and I think I prefer without. Didn't stop me eating the lot though...

Rib eye steak, seasoned with Kosher salt and done indirect on the Smokey Joe with a handful of hickory chips. The sear was done at the end with a blow torch. Seasoning well and early is important http://i288.photobucket.com/albums/ll185/mattt1/Mobile%20Uploads/88FA8405-81DC-4E43-B21F-B442E1B7F772_zp...

Re: What Did You Cook Part 11 - January 1 2015

Smoked a scotch fillet steak lightly with hickory, sautéed some mushrooms in onion gravey, packed it into a cut up French stick and threw it in the sandwich press. This was the delicious result. http://i288.photobucket.com/albums/ll185/mattt1/Mobile%20Uploads/2AA3F7BE-DF24-4CE8-B268-57BFBB442639_zps...

Smokey Wings on the Smokey Joe

Am a real fiend for smoked chicken wings with hot sauce (franks). Makes for brilliant dinner with a couple of beers. Getting ready to smoke http://i288.photobucket.com/albums/ll185/mattt1/Mobile%20Uploads/9748C83E-02BE-417B-A2D8-F4AA312E69F0_zps0dkpejnm.jpg Charcoal settling down http://i288.photobu...

Also some pulled pork done on the weber for a mate's bucks party recently. Smoked with Apple & Cherry and spritzed with Apple juice/SBR/water mix every so often. http://i288.photobucket.com/albums/ll185/mattt1/Mobile%20Uploads/72395360-85E4-4F4E-96CF-0C56D9711CFD_zpswgpef0yd.jpg Pulled and ready for...

Help with pork taco filling!

Hi all, I have to make a pork taco filling tomorrow and I've only got about 4-5 hours to work with.... I really could use some help from the BBQ community! I was thinking along the lines of a smoked pork shoulder, but the time limit rules out pulled pork I would think. I was thinking of just roastin...

Re: My first Brisket.

That looks unreal mate!
What did a brisket like that cost you?
I'm from Perth but have to say Vics Meats was a brilliant find last time I was in Sydney - that brisket roll is sensational.
