Low and slow on the cool down

Disaster.. Woke up at 2am to a temp of about 75c. Opened the top vent with a slight adjustment. Apparently not slight enough because woke up at 7 to a 200c oven! Despite this, pork faired surprisingly well on the inside (although obviously dry). Outer was burnt beyond belief. New rule: no more over...

I'll give it a shot tonight. In theory I'll be finished with the dinner shift by 7:30 and I'll do the low and slow around 10/11.. Will report back!

Low and slow on the cool down

Hi guys

Thoughts please.

If I fire up the Akorn to 250c etc to do a dinner, is it feasible to do a low and slow afterwards by catching it at a slow temperature for an overnight cook?

Or would the fact too much charcoal is lit make this mission impossible?

Today I did slow lamb shoulder (which I rushed, but was really good) and then ramped up the temp to do a loaf.

FYI, the Akorn (and presumably the Dragon) will need a hex driver/socket wrench to put it together. It's not too fiddly but needs a good squeeze.

Akorn for me.

I'm a newbie but there is nothing at all difficult about putting a fire lighter on top of some charcoal and then closing the lid and waiting 20 minutes.

The bread has the most lovely smoke taste from a few hickory chips. Kamado is an excellent bread oven.
