5kg Piglet

This right here is why I'm cutting some kegs this weekend to make a nice long spit home away from home for piggies this summer. Can't wait.

Re: Confused

Weber or ProQ depending on how important certain things are to you. The Weber can be configured with a bit of jiggery to do low and slow, and lots of people do it that way. The ProQ does low and slow simply and easily, and you dont have to worry about the ash pan as its all caught in the bottom of t...

Thermapen Mk4 – Next Generation Thermapen!

Yeah I think I bought from there last time, but I haven't been real happy with it and the connection in the unit went flaky after warranty ran out, so I'm a bit hesitant. Probably prefer to buy local and support our guys here. Thanks for the idea though.

Re: Thermapen Mk4 – Next Generation Thermapen!

They are, but still a hell of a lot of cheaper than ordering direct from USA and paying currency conversion (works out about $200 at present). I would have ordered one, but my stupid login for the site isn't working for some reason....will work it out eventually

Dehydrator or Electric smoker

If you can consistently keep temp around 60 - 65 degrees C then it might be ok. I haven't had much success using a smoker for dehydrator purposes and vice versa, so have both.

Maybe I should make something

I would use those 2 at the back on the left and join them together for an oversized ozpig. I know some people rave over the pig and it's great for what it is, but it's too small in my opinion.

If you have a busy life and/or don't want to be tending a fire for the duration of your cook, these easily beat a stick burner hands down. I decided to buy pellet grill and then make a stick burner when I have time and inclination

The RUB

Best rub I've ever used for beef is the good old SPG - salt, pepper, garlic. Any other flavours I want can be obtained through sauce. There are definitely some great runs out there, but I view them as something to be used sparingly and as an accent to the flavours of the meat. All comes down to pers...

JERKY JERKY JERKY

If you want nice soft jerky, cut against the grain. If you want to give your jaws a workout, cut with the grain. I also prefer thick cut. My starting recipe is usually soy sauce, maple syrup and finely diced ginger and chilli. I just mix it up to taste then marinate the meat in it in the refrigerato...

Quickest way to light charcoal

5 mins ain't going to have a full chimney of heatbeads ready to cook on with a looftlighter. If you want me to make a real boring video to waste 5 mins (it will be more) of your time proving it, say the word.

What Did You Cook Part 11 - January 1 2015

Made arosticini for dinner tonight. Was chicken instead of lamb and I gave them a nice glaze of soy, maple syrup, and mirrin thickened with with cornflour. First batch going on the charcoal; http://images.tapatalk-cdn.com/15/09/08/caf328813407f25bd3d7e928a28170f6.jpg Had to take a pic of the finishe...
