this thread is really old but i want to chime in heat beads are pregnated with an accelerant to burn....its why u are supposed to leave them a while before cooking on them. I would not recommend this method with the branded heat beads unless u want to contaminate your food....lump charcoal go for y...

Make sure you wash the sand....and don't use it wet! Hot Wet sand smells. Foil over the top of the pan.

Remember that you stack these up, so you cab get a lot more in than you think. Pellet consumption is not a concern, my Jim Bowie uses 220g an hour on Low and Slow.

Yep, no brick, I use a rectangular drip pan, sits nicely in the bottom. Set your snake so you don't have to adjust the coals...if you setup carefully, you don't need to fiddle.

Download the Tri Fire cooking guide I wrote for Hark earlier in the year....look on the Hark Website. Different unit, but all the fire techniques are the same.
