Another thing, That may help, I cook all sausage on a low heat. Not low and slow for hours but nothing like a searing heat. The other thing that effects the outcome is the container, in something relatively sealed like a ProQ or WSM the smoke exposure is different to adding smoke from a tube, tray or a generator like the smokai to pellet grill where the smoke is being pushed out. Interesting , I've used Fuel pellets in a smokai cold smoker for hams and fish and I could not fault it :?: They all had a great hickory flavour.
