Pardon my ignorance, but I'm new to smoking methods. What type of timber was the plank ? Hardwood or Softwood? I brine fillets for a couple fo hours first in 1 litre water mixed with 1/3rd cup brown sugar and 1/4 cup salt. Put them straight on the grate but oil it a little first.
