Pardon my ignorance, but I'm new to smoking methods. What type of timber was the plank ? Hardwood or Softwood? I currently just smoke fish in the hooded gas BBQ using ironbark sawdust and am keen to try other things, have a Weber knock off that I've used with chips but have found temperature contro...

I brine fillets for a couple fo hours first in 1 litre water mixed with 1/3rd cup brown sugar and 1/4 cup salt. Put them straight on the grate but oil it a little first.
