Burnt Meat or is just me?
Everyone knows that burnt meat is bad for you. I've noticed on a lot of pics on this forum and elsewhere in American style BBQ or low and slow that meat (Brisket, Pulled pork etc) looks burnt on the outside. Is this just the rub burning ? And if so is that not the same in terms of carcinogens ? Thanks

Already got the charcoal from my gasser converted charcoal spit rotis and head beads from my Weber GA.
Is there a cheat method to doing ribs on a weber guys? Not sure I can warrant getting a maverick dual temp gauge just yet. Maybe snake without it works all the same?

Went to Papi Chulos today. Was very impressed with the BBQ. Brisket was awesome. Pork belly was great too. Bloody pricey, though wouldn't expect anything else from Mr Hemmes!
