Re: Coffee Roasting

Perhaps the best place to start is a simple salt/pepper/coffee rub like this:

That way you could taste the difference the coffee makes without too many other flavours getting in the way.

Re: Authentic Italian Pizza Dough Recipe Instructions

Anyhow good to drop in. Every now and then an email pops in my inbox then nothing for ages. Is there anything we can do to make you drop in more often? http://i981.photobucket.com/albums/ae291/fabzoops/Food/IMG_20150307_213331480.jpg http://i981.photobucket.com/albums/ae291/fabzoops/Food/IMG_201503...

Not your memory, but mine is. I had a wine infused "moment" and mixed up your signature with Bodgy's as we also haven't seen him in a while.

I'd be interested to know if you've mixed your coffee and BBQ hobbies at all. Any coffee based rubs?

Re: Someone is paid money to come up with this!

Not sure of his technique but he smokes all kinds of weird stuff Salt, Soy Sauce, and Marmite He loved the Marmite so he did Vegemite too. Sorry GG, but you have to clarify this for me. When you say he smoked it, do you mean he spread some on wacky tobbacky and inhaled it or do you mean he cooks it ...

Having lots of one characteristic or flavour profile is not necessarily a good thing.

Jokes aside, I see it as a failure on my part when there is a food that millions enjoy yet I can't. I extend this to scorpions, crickets, rats, etc.

Sure sure, me too! ;) Every jar I get accidentally ends up in the garbage and I hardly ever see it at the supermarket :D

Re: Someone is paid money to come up with this!

Me personally, I can't stand the axle-grease in a jar. Ha! So I'm not alone in comparing Vegemite to a car lubricant. :D I think I compared it to licking the bottom of an oil sump... I bought a little jar a few months ago because I wanted to get over the dislike and use it on meat, but haven't summ...

Re: Someone is paid money to come up with this!

I tried those meat pie chips and they taste like a million other ordinary chips. The last really good chip I had was this range:

Check them out next time you're at woollies.

Re: Buying Ribs in Sydney

Thanks Narmnaleg It's a pleasure. I hope it works out because the place is very handy. Vince has sorted me out with brisket as well as the special loin cut that I use for Porchetta based purely on photos that I showed him :) In fact last time I made porchetta he told me to go in to the shop and he'...

Re: What to buy next..

But I do also want a rotisserie. Once I've settled into my new place and Maximus is setup and ready to use I'm going to try and make my own version of this, I've already bought a cheap rotisserie for the purpose: _cFHOW87Erc I reckon it should be able to take two chooks or a decent pork loin... tim...

You're right about the quantities Chris, I've just never found the need to cook for so many, but if that's a requirement the tri fire would be the one to get.

Re: What to buy next..

I have both the Tri fire and the Maximus and I like both, but I'll vote for Maximus any day in a showdown. Pretty much everything that I can do on the tri fire I can do on the Kamado. I realise that I can do larger quantities on the tri fire, it's also a bit different using wood (including the incre...

Re: Buying Ribs in Sydney

"1 T-bone please" and so on, just take whatever they grab. Mine knows me well enough now, when I ask for a steak he pulls the tray out automatically to show me :p Very true :) At the Kogarah place they know that when I ask for a t-bone they have to get the slab from the back and cut it thicker for ...
