Sounds like a dodgy probe. Also, I'd check that the chook wasn't in a part of the fridge where it got accidentally frozen, because the breast should normally overcook before the legs.

Thanks Chris, I'm not too worried about how it looks because once the colourbond flashing goes back up you can't see it at all.
