Sounds to me like the best option is to have the BBQ running on natural gas like the house and have the heater/s on bottles. If possible. I'm not sure about these regs though, because there are lots of restaurants that have multiple heaters on outdoor decking areas and it doesn't seem to be a proble...

That's a good buy for $50!

I'd use an old pot from the kitchen that you were going to chuck out as the ash catcher. The handles make it easier to dispose of the ash when finished.

Thanks Muppet that makes sense. I'm particularly impressed by how moist it looks despite it being very lean. I'll have to try the steaming to temp method.
