So if I have a piece of meat sitting directly above the coals it will cook the same as if I had them to the side cooking indirectly? The top of the ribs were ok the bottom was charcoal. To me that's too much heat coming from underneath. I agree with you Ant. Direct heat was the problem. They would ...

+1 to Chris and Gumb.
A reverse sear on my BSK is my all time best grilled steak. Start it real slow with some smoke, when steak is at the right temp take it out and open all vents. Wait for inferno to be ready while resting steak. Then grill away and get a fantastic Maillard reaction.

The best place to start is to have a look at a few youtubes (check out the Aaron Franklin ones) so that you're familiar with the cut of brisket you're looking for. You may need to order it ahead of time at your favourite butcher as it normally ends up in sausages, so they'll have to save it for you....
