I did a four hour one (215F) with finish on 450F... Still not really crispy skin but moist as!!!

Gonna do all my chooks low and slow from now on!!

Yup theyre beginning to breed bisons in Oz.... Supposedly the meat is very lean and very good for you...
Anyway haven't found a supplier yet here on the Sunshine Coast but would be very interested to try!!!

I am going to try reversed grilling my steaks in my smoker (get them up to temp) and finish on the grill (party of 6)..

I mainly use charcoal.. or bug ol lump when I do a 12 hour cook...
No briquettes for me... I pay about 40 dollars for a 20kg bag...

PS I do recommend Heat Beads if people want to use briquettes as theyre the best around imo
