Actually I've just done a bit of googling about it. Would be best if you read in to it yourself. Some say you can burn it off. Others say mix water and some sort of acid and that'll get rid of it. Either way, the fumes from it are nasty, so read up about it for yourself first. Just Google something ...

Meat only takes on smoke until it reaches a certain temp, so yes, do it how you mention. (I can't remember what that temp is) As for reheating, I haven't done it as I don't have a vac sealer, but if you do, vac seal the portions and reheat it in the bag in hot water.
