Somewhere along the line I must have got so lazy with my kettle that all I was doing was dumping half a bag of lump or briquets up against one side (No baskets) and a water pan on the other. Lid vent over the water and start up a few coals.

There should be an obvious process of reverse assembly. But something I thought of that might help is if the knobs just pull off, You could try spraying an electrical contact cleaner that is lightly oiled. I ended up going with the thermopen One. So an upgrade to what my old model is. Given that I use it every other day of the week, It's probably the right tool for me. I got a yellow colour again as that is the colour drilled into my head to spot when I'm looking for it.

You dont need nitrite or nitrate for hot smoking but it wont be pink or have the classic ham flavor. The sugar and salt cure is fine but will make grey or funky color bacon.
