I will follow this section with interest. Keen to know about meat suppliers. I get my stuff from the York Butcher (as it is only 20 minutes from home) but always keen to see if anyone gets good packer brisket.

I have also tried with Woolies corned silverside. It came out really well. Only thing with mine was I put a bit too much pepper in the rub (made it a bit hot) and I didn't soak the silverside for long, so it was a bit salty. Hi
I will keep trying citrus stuff. I want to use it to make smoky cocktails. I have tried a cocktail made from smoked pineapple and it was great. Will keep posting here if I have any success.

Hi
I punched some holes in an orange and cold smoked it in the weber while smoking cheese. It didn't take up a smoky flavour inside. The skin had a smoky smell but the flesh of the orange absorbed little any. Will try again with bigger holes and cutting it in half.

Smoking Fruit
Hi
Have any of you guys ever tried smoking fruit such as pears, lemons, oranges etc. I assume you would smoke them with pellets like cheese. If anyone has are there any ideas of timing issues to watch for etc.
I am going to have a go so will post any results.

Hi Thanks everyone. I doubt I can get to Victoria in March 2012, but will certainly keep it in mind for 2013. I will try to remember to get some photos of my cooking and work out how to attach them. I am not the greatest with technology. I am not happy that my family has me busy so I can't cook this...
