Ken, too bad you can't get this way. One piece of advice...BE VERY CAREFUL IN MEXICO! Especially if you cross through El Paso or Laredo. There is a lot of violence there with the drug cartels.

For Saturday lunch, I grilled a filet mignon, along with corn on the cob. For the side, I soaked some apple slices in a melted butter and brown sugar concoction, wrapped them in bacon, and smoked them at 250 for an hour. The charcoal or briquettes won't put out much smoke, and will only add flavor. The addition of wood just adds to the flavor, while producing some smoke. Here in the U.S. at competitions, teams are forbidden to use anything but charcoal or wood, so you know the solid fuels produce great BBQ. I'd go w...

A trick I've learned is lining the water pan with foil, then filing it with lava rock (mine are about 2/3 full). And don't put water in it. The lava rock will act as the heat barrier, and will absorb some of the drippings. I've cooked four times on this batch of rock, and don't need to change it out...

I have Bear Paws also, and love them. They are great for lifting meat off the smoker, for sure. But in shredding pork, they can still be a chore, although not as much as by hand or with forks. I'll review them when I've had a chance to use them, that will give a chance to compare them to Bear Paws, ...
