Top wide open, control it with the bottom vent only. The fire depends on air but it needs the flow to get fresh stuff in and the smoke out.

I agree with Davo, never had a problem, but then again I've always used gas to start any beads or charcoal, using starters is a sure way to disaster taste wise.

Dave try the Coconut Heat beads, they burn hotter than the standard ones, might give you quicker cooking time with less chance of stewing the toppings.

I'm using their Coconut heat beads more and more, as well as the lump charcoal. The 10Kg bags od Coconut HB are about $18.00 at Bunnings but I picked up a couple of bags from Coles for $13.00/bag.
