My main go to unit is the Yoder YS1500 but have been cooking a lot on the Weber smokey mountain lately too (same as pro q)

I'd keep smoke on it for at least 4 hours or so... that helps make your bark too, just add those chunks as you need to!

Have cooked it, it's pretty good considering how cheap it is... Can't really compare it to grass fed Cape Grim though, that's like apples and oranges.

I do have some product manufactured in China, some from Thailand but majority USA. Not BBQ related mind you. The biggest thing about doing business in China (well Asia in general) is connections & relationships... you really need to have them and have good ones at that. I would start by approach...

Yes, but it would be fun to do a fact-finding mission! Actually, one of the reasons I was drawn to the Rec Tec was that I was going to get their mini (got as far as paying for it with a delivery fee of $US99 all the way to Oz, which their website allowed me to do, to my absolute amazement - how sad...

That is a very well thought out build Andrew, well done mate!

There is a lot of familiar features that I think take it up a notch! :D The trap door next to the fire box is a great one for instance, there will be times you're glad you put it there, that is for sure.
