How did the pork go there lockyer rub looks great. The enclosure for your rocket is a great idea ,a must do project for me oneday Cheers I understand why people will use foil on these cooks now !! She has started to rise heading up to 170f now so might be lucky and only have a 2hr stall !!

Hitting the stall point just under 160f, will be interesting how long it stalls for? Time for pics the pork with the rub just about to go in to the cooker and the cooker in full swing sittjng around 230f.

Woolies rolled boneless pork shoulder
Have started the cook of the shoulder, took it out of its netting and removed the skin and a bit of excess fat push her back together and tied back up and hit it with our bbq rub and sat it back in the fridge for 24hrs. Taken a photo of it before going onto the ProQ, being 2.5kgs thinking about 8 hr...

I have plenty of narrow leaf ironbark, I have collect some 75mm branches that have come down during storms etc, have cut them approx 100mm long and dried them and removed the bark, just need to bite the bullet and give them a try on a smoke up. Which reminds me I must get onto a couple of local FB p...
