Both. Cooking it longer renders more of the fat that melts at that temperature as it migrates through the meat. Cooking it hotter renders the fat that only melts at higher temperatures. I just got the Kamado Joe D&C split heat deflector - it gives you two zone cooking and a nice amount of thermal mass. It was discounted in BBQG at about $30. My Dragon lives under the verandah and I cook on it too often to bother with a cover! A quick brush to get any dust off and away we go...

I agree there are too many beads, making it burn too fast. I don't agree that it will be a problem - chuck is one of the most forgiving lumps of meat you can cook! I reckon it will come out fine... some of my best have been done quickly at 350F in the early stages and then held at temp for a long ti...
