resting with the breast down will let the juices (by gravity) to settle naturally into those normally dryer areas for an all round tastier and moister chook
and yes in does continue to cook a bit whilst this is happening .. all the better :wink:

It's a good looking chook! I've got a hard to please lot at my place when it comes to a roast chook .. they all like it very well done right to the inner thigh bone so I do a 82/84°C inner thigh until the legs are loose/flop out easy .. then I'll rest it breast down in foil for 20mins or more before...

I've got a Everdure Stirling it doesn't get used much but I wouldn't part with it it's on natural gas and has great searing heat on the grills I don't use the hot plate as I put in a wok burner in it's place and I use carbon steel frypans on that as they are better and easy to clean never had any ex...
