Re: Maximus Portable Wood Fired Pizza Oven

How's Max going? Planning on getting a Maximus in the next fortnight or so. Too bad they don't stock the stand anymore!
Do you mind sharing your dough recipe/method?

Based on bbq videos on youtube, I don't think the Yanks use them very much....?

Good opportunity to skip the 22 inch and get the 26inch! Not to mention the available colours for the 22inch!

Might look into it

I’ve had a few suggestions to stick it out with the weber, and you have put an interesting spin on that one. What sort of temperature control are you referring to?

Re: My crossroads in bbq.

I was in the same position as you. Loved the idea of low&slow (and eating it) but not standing there to muck around with the vents. Bought a Temp controller. Amazing. I've never looked back since. Longest cook I've done so far was 13 hours with no charcoal refilling. I love my kettle and temp co...

Low and Slow Beef Short Rib

Brined for 2 days (more for moisture) with little salt and plenty of garlic powder. Then Sprinkled wi...

Asian Butcher Beef Ribs

Thought I'd try these out. They're by no means a premium cut, but thought it'd be fun to give them a go being $5.99 per kg. Did something like 2-2-30mins. Family prefers sweet sauce beef or pork. Didn't bother with Hickory and just let the Mangrove charcoal do its thing. https://scontent-lax.xx.fbcd...
