I was in the same position as you. Loved the idea of low&slow (and eating it) but not standing there to muck around with the vents. Bought a Temp controller. Amazing. I've never looked back since. Longest cook I've done so far was 13 hours with no charcoal refilling. I love my kettle and temp co...

Thought I'd try these out. They're by no means a premium cut, but thought it'd be fun to give them a go being $5.99 per kg. Did something like 2-2-30mins. Family prefers sweet sauce beef or pork.
